We make maple syrup because we have the trees, the sugar house and the desire to produce a product that is 100% natural. Currently we collect 95% of our sap using tubing and a vacuum pump. We have four separate collection locations and these areas do not have vacuum. We have started using 3/16' tubing in some of these areas instead of the traditional 5/16' tubing. We recently bought a Reverse Osmosis machine but we still use a traditional flu pan resulting in a longer time in the evaporator, which produces a better flavor. We boil it thicker and filter it once, all adding to the Hogsback Experience.
